Cheese. Beer. Enough said? Yeah, we did it; teamed up with our neighbors and friends down the road at Prairie Artisan Ales here in Krebs OK. Using the same ingredients they age their legendary Imperial Stout on we have created a truly boldly unique cheese. Each batch of this raw Jersey cow’s milk contains a heaping amount of Ancho Chilies, Coffee Bean, Vanilla Bean and Cocoa Nibs. After this cheese is brine salted, we let it soak in BOMB Imperial Stout for 3 days. The result; a rich buttery cheese packed with an array of taste sensations and a smooth stout finish. Wow. Give it a try! The milk for all of our hand-crafted cheeses is from family owned single source dairies and is hormone and pesticide free.

Shop Storage: Refrigeration
Home/Restaurant: Store in refrigerator. Leave out at room temperature for several hours before enjoying this cheese. Cover remaining cheese with cheese paper and put back in refrigeration.
Flavor: Buttery ,cheesy greatness of Jersey Cow’s milk along with bold coffee, vanilla, ancho chili, and cocoa nibs and Prairie Bomb soaked rind!
Beverage Pairings: BEER and beer cheese…..yeah! Try a Prairie Standard and a wedge of this cheese for a sure hit.
Food Pairings: At room temperature this cheese is wonderful with fresh fruits; apples, pears, and figs.
Cooking Tips: Always serve this cheese at room temperature or heated. Cheese served best on a cheese board paired with fresh fruit and cured meats. Does melt well if when used in pasta dishes.
